Dry vegetable powders are whole vegetables — tomatoes, onions, coriander — that have been dried at low temperature to remove moisture while preserving their natural colour, aroma, vitamins and phytonutrients, then ground into a fine, flavour-dense powder. They are not the same as artificially flavoured seasoning powders or bouillon-based mixes.

The concept is ancient — Indian kitchens have dried and powdered vegetables for centuries as a way to preserve seasonal abundance and build a pantry of concentrated flavour and nutrition for year-round use.
